Welcome and thank you for participating as a Gumbo Cook off participant in the Crawfish Festival of New Braunfels. We are glad you are a participant and hope you have a great time at the Festival.
Booth Set up. Contestants may check-in on Thursday, April 26th between the hours of 2:00 pm - 5:00 pm. or Friday, April 27th between 12:00 – 4:00 p.m. All vehicles must be out of the gumbo area by 4:30 p.m. If you choose to leave your equipment overnight, we will have staff on premises overnight, but are not responsible for any damages or theft to property located at your booth or anywhere on the Fairgrounds property. This is as a courtesy only to participants. Contestants are not allowed to stay overnight, unless they have an RV spot or with prior approval of the Chair.
Contestants may begin setting up their booth at 7:00 a.m. on Saturday, April 28, 2018. All contestants must be checked in and on property by 9:00 a.m. Come in through the entrance located on Common Street, closest to Grant Street (not the main entrance) for unloading. All vehicles must be moved to main parking area by 9:00 a.m.
Staff will check for fresh meat ingredients, outside of crawfish tail meat, which may be frozen or fresh, and previously smoked meats. Roux may not be store bought, but may be pre-made. Veggies may be pre-cut, fresh, frozen, or canned. Competition will be judged on flavor, taste, color, texture, and overall appearance on a scale of 1-10. The top 10 gumbos in each category will move to the final table.
Each booth is allowed to bring in one 100 qt. cooler of
canned beer, sodas or water, NO GLASS, for the
weekend. This is the same restrictions as applied to BBQ
cook-off at the fairgrounds and will be subject to the same
restrictions and check-in procedure. This is the only
outside alcohol allowed. Any team found in violation will
be disqualified from competition, removed from the
premises for the duration of the Crawfest NB.
Presentation will not be scored and no rice should be
included in the turn in container.
Cooks meeting is at 10:00 am in the 20 X 40 judges tent.
One representative of each team should be present to
receive 32 ounce turn in containers. Please fill the
container at least 2/3 full to make sure your entry has
enough gumbo to go through 2 rounds of judging with 3
judges in each round tasting.

Parking. Contestants must exit through the main Common
street gate as entered and will park in the designated
gumbo participant area of the main fairground parking
Contestant Breakdown. Contestants will not be allowed to
have vehicles enter to break down until one hour after concert ends Saturday due to high
pedestrian traffic. Until the end of concert, all items must
be carried out on foot if a contestant wishes to break down
early. Please stay and enjoy the show.
